Camping Update-Getting Ready!! So Excited!!!!


We are in full swing preparing for our next camping trip. We leave in a few days.

Our living room is overrun with all of our supplies and this evening Joe is going to fix the portable headboard. I'll be packing our clothes and toiletries. Our bedding is all ready to go as we washed them after our last trip and they are in a large ziplock bag.

We will be camping for 4 days, so we will be bringing the tent for sleeping and a shelter for preparing meals. We'll use both a campfire and a Coleman stove to cook. We also have a Coleman oven for baking. 

Our tent flooring is still being discussed. Last weekend we bought two large quilted moving blankets at a thrift shop that I think might work, but I don't know how many times they can be washed before they fall apart. 

For my part, I’ve made the menus for the trip, sorted and organized the kitchen equipment/supplies, made lists for each meal and made a shopping list based on both the list and items that Joe noted we needed. We’ll do our final shopping and packing tomorrow. Fortunately, our shopping list isn’t too long.

I’m also getting my recipes together. I don’t want to take my whole library of cookbooks, so I have to decide which one will serve me best. I also have my big binders of recipes I have collected over the years. Back in January I organized all of the loose recipes I've printed and put them in two big binders.

The weather is supposed to be mild with the highs in the 60's and the lows in the 50's. No rain until the day we pack up to go home. But that's still a way off so I'm hoping that rain holds off until we back home. 

Our big project has moved to the back burner as we are focusing on this trip. That is on purpose. We are still working on it, but not letting it consume us for a bit. It was stressing us out and as important as it is, it's not worth killing ourselves over. Relax, it's almost that time of year so...really...relax.

Soaking Flour As one of my goals for January, I have been reading the book, “Nourishing Traditions,” by Sally Fallon Morrell . Soaking, fermenting, sprouting were all so foreign to me until I started this journey to healthy, homemade living. Sally writes about soaking flours to reduce anti-nutrients such as phytic acid. The recipe calls for 3 ½ cups of freshly ground spelt flour. As of this date, I don’t have a grinder for grains. I do have a coffee grinder that I can use for softer grinds like sprouted/dehydrated buckwheat and oat groats. But when I tried to grind spouted/dehydrated wheat berries, the little coffee grinder just wasn’t up to the task. A grain grinder is on my wish list.

A Moment of Confession-NOT homemade Entertaining

This weekend was exciting! My youngest son has moved down to this area over  the weekend with his girlfriend. They drove from Boston, Ma to here in South Carolina all in one day! That's young people for you!  Guilt warning: We took them, along with my daughter who already lives in the area to dinner Sunday evening. I wish I could have had them all over to our home for a meal But alas, our abode is too small and over-furnished. So we ate at the local Chinese buffet. Next time we get together for a meal, even if we have to set up the camp shelter, we're eating at home. It's more fun to eat at home and the cost difference is incredible. Plus having control of the ingredients served means healthier food.  Yesterday, a Monday, I took Mom shopping then picked up my son and his girl so they could spend time with each other. Went to Tropical Smoothie Cafe and everyone got a smoothie, then got one to take to Joe at his work.  So there's my sin. I ate dinner out

Homemade Coleslaw and a Haircut

Last Sunday, before I took Mom out, I made homemade coleslaw for this week. I tend to make too much, so we eat on it for 3 or 4 days. Last night it went with steamed uncured beef hot dogs and tonight it will go with grilled fish. When I was making the coleslaw, I tried to film it. You'd think I would have dusted off the tripod and digital camera, but no! I thought I would just use my phone...Dropped it twice, once into the coleslaw mix! Good thing the food was intended for our consumption only! The coleslaw I made: 1/2 head of a big cabbage, organic 3 carrots, organic 1/2 onion, organic 1 cup or so mayonnaise 1 tablespoon white vinegar 2 tablespoons raw sugar, organic 1/2 teaspoon dill weed, organic 1/4 teaspoon parsley, organic 1/2 teaspoon pink salt 1/8 teaspoon black pepper, organic 1/8 teaspoon garlic powder organic, optional Wash and pat dry veggies.
