The next few weeks will be challenging. Joe and I have a huge project in the works, but I can't talk about it yet. It will take most of the free time we have to complete, so making homemade meals will be even more difficult. But really, that's what life is about. It's easy to be good during times of calm.

Feb. 26, Monday - Seared Pork Tenderloin w/ roasted red potatoes and carrots
Feb. 27, Tuesday - gluten free pizza-Confession, it was from Dominos. Came home and didn't want what I had planned- backslide, will discuss in another post
Feb. 28, Wednesday - Homemade potato soup w/ uncured bacon
March 1, Thursday - Stir-fried rice w/ left over pork tenderloin, grated cabbage, carrots and onion
March 2, Friday - Leftover potato soup and salad
March 3, Saturday - Meatloaf, green beans and roasted red potatoes
March 4, Sunday - Spaghetti bake using leftover meatloaf in sauce

We are still working on the that big project. I am ready to see the completion. Updates soon.

March 5, Monday- Uncured polish sausage w/ red potatoes and carrots
March 6, Tuesday - Salad w/ grilled chicken
March 7, Wednesday - Vegetable Soup w/ grilled cheese sandwich
March 8, Thursday - Italian sausage w/ green peppers, onions, tomatoes and rice noodles
March 9, Friday - Tuna Salad in sprouted pita bread w/ tomato and sprouted greens
March 10, Saturday - Grilled hamburger w/ sprouted pita bread, tomato and sprouted greens
March 11, Sunday - Shrimp w/ potato salad OR pasta salad, haven't decided

Big project coming along.

I'm rethinking this post. With all of the energy going into our big project, I am getting overwhelmed. I think for the next several weeks, we will be having simply dinners that will consist of soup, grilled meats (organic chicken, organic ground beef and organic pork,) salads, quick stir-fried veggies.

I'll post when I do more interesting meals, perhaps even do a video or two of them. Right now I battle the temptation to order take out.
