Hot Summer....Really

This has been a very hot summer and our little container garden has shown the effects.

The peppers  and sweet potatoes are loving this hot weather. But our heirloom tomatoes and bush beans didn't. In fact, our beans completely died. The tomatoes are coming in slowly, but much smaller than they should. In fact, the tomatoes that should be at least 4 inches across are only about an inch. They look more like grape tomatoes.

Our herbs are stressed as well. The dill has gone to seed, the basil and sage are okay, but the mint plants have stopped growing.

I go for my first chemo treatment next week. Last Saturday my daughter, Rachael went with me to get my hair super short. I've been reading a lot on what to expect and how to get ready. Everyone at work loves my new hairstyle, but I don't. My ears and my neck are cold, however I know it will get worse.  Above picture is me the first day back to work after surgery.  Taken half way through the hair cut....HHHHAAAAA And after the deed was done. And my tears dried. We are also getting meals pre-made and frozen and we hope to buy a recliner chair so I won't be stuck in bed when I am recovering. I've also been watching YouTube videos of women who are going through or have gone through chemo/radiation treatments. Some depressing, some inspiring. Thinking about Next Camping Trip

Posting those Kings Mountain Campground videos on YouTube yesterday got me longing to be outdoors again. I am hoping we can have a camping adventure in February, perhaps to Huntington Beach State Park or Little Pee Dee in Dillon. I like the idea of camping at all of the state parks here in South Carolina that offer campgrounds. So far we have camped at Kings Mountain and Myrtle Beach state parks. Loved, loved, loved Kings Mountain ! For the most part, the ranger station was well stocked, but they were having trouble keeping firewood in supply. The campsite itself was fairly level. The roads were gravel. The squirrels were aplenty. Lots to do and the fact they have the historic farm with CHICKENS! Awesome! Oh, and they offer hiking and other stuff.  The above pictures were taken at the Living History Farm Look how close we were to the closed bathhouse!  The one issue with Kings Mountain was the bathhouses. Making Soaked Flour Buttermilk Biscuits

Soaking Flour As one of my goals for January, I have been reading the book, “Nourishing Traditions,” by Sally Fallon Morrell . Soaking, fermenting, sprouting were all so foreign to me until I started this journey to healthy, homemade living. Sally writes about soaking flours to reduce anti-nutrients such as phytic acid. This improves the digestibility and absorption of minerals considerably. Helpful link: https://www.thehealthyhomeeconomist.com/video-thursday-how-to-soak-flour-for/ So over the weekend I decided to make Sally Fallon Morrell’s recipe on page 484 of Nourishing Traditions, Buttermilk Biscuits. The recipe calls for 3 ½ cups of freshly ground spelt flour. As of this date, I don’t have a grinder for grains. I do have a coffee grinder that I can use for softer grinds like sprouted/dehydrated buckwheat and oat groats. But when I tried to grind spouted/dehydrated wheat berries, the little coffee grinder just wasn’t up to the task. A grain grinder is on my wish list.
